The operation is intimate — a small counter, a chalkboard menu that changes daily, and a handful of tables occupied almost entirely by locals in the know. Breakfast, served from 7 AM, is anchored by the Saltfish and Provisions plate: desalted and sautéed saltfish alongside boiled dasheen, green banana, and breadfruit, dressed with a light tomato-based sauce. The dish captures Dominican morning eating at its most elemental. Lunch transitions to heavier one-pot fare: Goat Water, the island's signature stew of slow-braised goat in a herb-rich broth that requires hours of preparation, features regularly and is considered by many regulars to be the best version in Roseau. Callaloo and Crab, another island staple, combines pureed dasheen leaves with blue land crab in a preparation that is at once creamy and intensely savoury. The cooking is entirely from scratch; what appears on the chalkboard reflects what was available that morning at the market. This brevity is part of the charm — the menu changes, dishes run out, and a return visit will often bring something entirely different.
