Gunma cuisine is defined by its mountain geography and agricultural heritage. Key regional specialties include himo-kawa udon (extremely wide ribbon noodles), yaki manju (miso-glazed steamed buns on skewers), konnyaku (konjac) dishes in every form, Joshu-gyu wagyu beef, fresh river fish (iwana and yamame trout), and wild mountain vegetables (sansai). The prefecture produces 90% of Japan's konnyaku supply and grows significant quantities of wheat for udon. Onsen towns serve elaborate kaiseki multi-course meals at ryokan dinner tables.
