De Kas

De Kas is one of the Netherlands' most visually and conceptually distinctive restaurants, operating from a beautifully restored 1926 municipal greenhouse in Amsterdam's Frankendael Park near the eastern suburb of Watergraafsmeer. The greenhouse was originally part of the city's public park system; when it was converted into a restaurant in 2001, the decision was made to continue growing herbs, lettuces, and vegetables within the glass structure itself. The result is a dining space unlike any other: guests eat surrounded by the plants that, minutes earlier, were growing above them in the upper nursery beds and adjacent growing tunnels. The menu at De Kas changes daily, driven entirely by what has been harvested that morning from the greenhouse and the surrounding market garden plots. There is no printed card in the traditional sense — the kitchen communicates the day's menu to guests verbally or through a brief written summary. A single three- or four-course format accommodates dietary preferences, with vegetarian and fish options typically available alongside the meat courses. Presentation is rustic-elegant, allowing the quality and freshness of the ingredients to carry the dishes without elaborate saucing. The dining room inside the greenhouse is remarkable: high glass ceilings, filtered natural light, long wooden tables, and the smell of earth and herbs create an atmosphere that is simultaneously refined and genuinely connected to its growing environment. The restaurant operates lunch service on weekdays as well as dinner, and the lunchtime experience in full natural light is particularly beautiful.
