Hacienda Zorita Wine Hotel & Spa occupies a 14th-century Hieronymite monastery estate roughly 10 kilometres northwest of Salamanca city centre, reached via the SA-300 road towards Ledesma. The estate borders the Tormes River valley and has been farmed continuously since around 1366, when the monastery was founded. Today the property manages a certified organic winery producing Tempranillo-based reds and rosados under the Hacienda Zorita label, sold in the estate shop and served exclusively in the restaurant.
The original monastery buildings retain original stone vaulting, carved doorways, and a cloister garden, which forms the property's architectural centrepiece. Accommodation is distributed across the historic structure and a sympathetically designed annexe wing. Standard and superior doubles feature exposed stone or whitewashed walls combined with king-size beds, wooden-beam ceilings, and modern en-suite bathrooms fitted with hydro-massage tubs or walk-in showers. Suites add a separate sitting room, and villa accommodation — the most spacious category — includes a private terrace and additional living area suited to families or extended stays.
Dining is anchored by the estate restaurant, which pairs seasonal Castilian cuisine — suckling pig, slow-roasted lamb, river trout — with wines produced on-site. A private cellar hosts guided tastings and pairing dinners for small groups. Breakfast is an ample spread of local cheeses, cured meats, house-made pastries, and fresh fruit from the kitchen garden.
The spa covers an indoor heated pool, sauna, steam room, and a treatment menu ranging from vinotherapy grape-seed wraps to deep-tissue massage. Outdoor activities include horseback riding on estate grounds, guided vineyard walks at harvest time, and cycling routes through the river valley. Service is attentive and rural in character; staff are well versed in Salamanca's cultural sites and can arrange day-trip transport to the city.
