The session opens with a ten-minute historical overview of marzipan in Toledo, connecting the product to the Moorish, Sephardic, and Christian confectionery traditions of the city's medieval convivencia and noting the long association of marzipan with Toledo's convents, where nuns historically produced figures for sale as income. Participants then move to the moulding station, where a master confitero guides them through warming and kneading the almond paste and pressing it into traditional wooden moulds representing Toledan landmarks — the Alcázar, the cathedral spires — alongside classic confectionery forms such as the anguila (eel shape) and the peladilla (sugar-coated almond). Each participant toasts their own figures and completes a tasting of four Santo Tomé marzipan varieties: the traditional plain almond, a chocolate-dipped version, a pine-nut variant, and a seasonal speciality that changes by month. Participants leave with a box of six hand-made pieces. December and January workshops feature the Christmas figurines that Santo Tomé has produced in the same moulds since the 19th century. Frequently asked questions

Is Toledo marzipan different from German or British marzipan?

Yes. Toledo marzipan uses a higher almond-to-sugar ratio and is lightly toasted rather than simply dried. German Lübecker Marzipan and other northern European variants tend to be smoother and less toasted with a lower almond content. The Toledo version is distinctively drier, coarser, and more intensely almond-flavoured.

Can the workshop accommodate nut allergies?

No. Marzipan is made entirely from almonds and the production environment cannot exclude nut exposure. Visitors with tree nut allergies should not attend the workshop and should note that the retail shop is also a nut-processing environment.

Is there a minimum group size for the Saturday workshop?

The workshop runs with as few as two participants. Solo travellers are placed in the next available group. Private weekday workshops for 4–8 people can be arranged with two weeks' advance notice — contact the confitería directly.

Can visitors watch production without attending a workshop?

The main production facility is not open for general viewing. The Saturday workshop provides the only structured access to the production room. The retail shop counter displays the full range of finished products and seasonal figurines daily.
