Gus's World Famous Fried Chicken originated in Mason, Tennessee, a small town approximately thirty miles north of Memphis, where Napoleon 'Na' Vanderbilt began frying spicy chicken in the 1950s. The Mason location was later taken over by his son Gus and daughter-in-law Maggie, who developed the signature recipe — a buttermilk-marinated bird dredged in a seasoned flour mixture and fried until the crust achieves an almost shattering crispness, with heat building slowly through the bite from cayenne and other spices in the coating. The Memphis location at 310 South Front Street in the South Main Arts District became the flagship outpost and drew national attention, appearing on nearly every shortlist of America's best fried chicken. The chain has since expanded to dozens of locations across the United States while maintaining the original recipe and the deliberately bare-bones aesthetic. Dining rooms feature paper plates, plastic baskets, and utilitarian seating; there is no pretension whatsoever. The menu is a model of simplicity — fried chicken pieces (the four-piece being the most ordered), sides of baked beans, coleslaw, and white bread, plus sweet tea and lemonade. The chicken arrives hot and crackling, with a crust that stays crisp through the entire meal. The heat level is described as medium-hot by default; the spice is present but does not overwhelm, allowing the flavor of the bird itself to be the main event.
