Ehime Prefecture occupies the northwestern corner of Shikoku island, facing the Seto Inland Sea. Known for Matsuyama Castle, the oldest operating hot-spring bathhouse at Dogo Onsen, the pilgrimage temples of the Shikoku 88-temple circuit, and the nation's finest mandarin oranges, Ehime blends samurai history with coastal scenery and one of Japan's most genuine onsen cultures.
Ehime's cuisine is anchored by the sea. Matsuyama-style tai-meshi (sea bream simmered with rice) and jakoten (a deep-fried fish cake made from small fish of the Seto Inland Sea) are the prefecture's signature dishes. The citrus-rich coast produces yuzu and mikan (mandarin orange), which appear in ponzu dipping sauces, sweets, and even ramen. Uwajima's tai-meshi variant uses raw sea bream marinated in egg yolk and soy. Ukai (cormorant fishing) in Ozu provides ayu sweetfish in season (May–September). Ehime sake breweries in Seiyo and Kuma valleys produce fruity, slightly sweet nihonshu that pairs well with local fish.
