Erzincan is a provincial capital in eastern Turkey set at 1,185 metres in a broad valley carved by the Fırat (Euphrates) River. Tarhana — dried fermented yoghurt and wheat soup — is the region's essential winter warming dish, while bastık (compressed dried fruit leather from local apricots and grapes) serves as both snack and dessert.
