Western Macedonia is a mountainous region of northern Greece bordering North Macedonia and Albania, defined by alpine lakes, Byzantine monasteries, Venetian-era architecture, and unspoiled wilderness. Kozani serves as the regional capital while Kastoria, draped around a lake peninsula, is its most picturesque city. Western Macedonian cuisine reflects its mountainous, landlocked character. Freshwater fish — particularly carp (karpos), eel (cheli), and trout (pestrofa) — from Kastoria Lake are local specialties. The region is famous for Florina peppers (sweet red peppers used in spreads, salads, and stuffed dishes), wild mushrooms from Grevena forests, smoked meats, and hearty bean soups (fasolada). Kastoria's fur-trading past brought Sephardic Jewish culinary influences. Siatista produces a local wine tradition. Meals are typically long, social affairs with multiple small dishes (mezedes).
